Ninav

An authentic Ckp dish mainly prepared on the last day of Shravan month which is also known as a pithori amavasya.

They didn’t know what to name this dish when it was first made, which is why it’s called Ninav, which means a dish without a name. 😀
So,basically they wanted to make a sweet dish out of the coconut which was offered during Shravan Friday pooja – they also wanted to use different flours (peeth) to celebrate the pithori amavasya.
If you haven’t tried it before, Ninav tastes similar to a besan pudding but with a twist. The coconut milk, jaggery, nutmeg and cardamom gives it a truly unique taste.

Ingredients
1 cup gram flour (preferably little coarse in texture)
1/4 cup wheat flour (coarse in texture)
1 cup grated jaggery (pls adjust as per yr taste)
2 cups freshly extracted coconut milk
2 tbs of ghee
1 tsp nutmeg powder
1 tsp cardamom powder
1 tbs of mixed chopped nuts for garnishing

Method:
First, prepare all the ingredients in advance.

To begin, heat a nonstick pan on medium heat and add one tbs ghee. Once it starts to melt, add the gram flour n wheat flour n sauté until it changes colour to light brown and gives a nice nutty flavour. Once roasted aroma develops, then remove n allow it to cool.
Now add the nutmeg and cardamom powder and mix well. Add the coconut milk and gently add the grated jaggery.
Keep on stirring until it combines well n there are no lumps n dissolves completely. And should have a smooth consistency batter.

Later, heat the same mixture for 6-8 mins till it starts to thicken.

At this stage you can transfer the mixture to a greased cake pan and bake for 15 mins on 160’C degrees celcius.

Since I have cooked this in a traditional way I have used a thick based earthen (clay based) tawa (pan) to cover the bottom n also to protect from burning the base and covered with another hot tawa pan. Cook it on Low to medium heat for 12-15 minutes.

Once it sets nicely remove and garnish with chopped dryfruits before cutting into diamond or square shape bites.
The texture is slightly crispier from outside n soft from inside.
